Day 1 Arrival in Ho Chi Minh City (Saigon)

Arrival at Tan Son Nhat International Airport in Saigon, where you will be greeted by our representative and transfer to your hotel in the city center for check-in and a well-earned rest (official check in time is 14.00, early check in is subject to availability and chargeable)

Day 2 Cu Chi Tunnels – Cricket Farm –Scooter Foodie Tour

Today we will spend the whole morning exploring Cu Chi which is known as an immense network of 220km of connecting underground tunnels divided into 3 levels at 6 meters, 8 meters and 10 meters deep underground. It is hard to believe that the underground networks were occupied and used by more than 10,000 people during the Vietnam war!
 
Tour the vast network of underground passageways to gain an insight into the tunnels’ history, life in the tunnels as well as the tenacity and resourcefulness of the Vietnamese during combat.
 
We will continue visiting a cricket farm on the way back to Ho Chi Minh City. You’ll receive a warm welcome from your host and you will follow him to see how crickets are fed and listen to a story about his family business of raising crickets. Later on, venture into your host’s kitchen to see how the insects are used in cricket spring rolls. Sit down and, for the first time ever, enjoy delicious cricket dishes.
 
Back to Ho Chi Minh City for a quick visit to the Reunification Palace and pass by some iconic sites like the Notre Dame Cathedral, and the Ben Thanh Market, then return to your hotel to freshen up.
 
This evening, get ready to delve into Ho Chi Minh City’s exciting night-time culinary scene from the back of a motorbike. The food adventure includes the rides through the small alleys to observe the real Saigon, as well as street food gems on display where you will sit down and sample the trendiest dishes which are familiar to , loved and eaten by locals. This is another approach to feel Saigon’s soul through its gastronomy when the sun goes down.

Day 3 Mekong Delta – Culture and Specialties

The “rice bowl” of Vietnam, the Mekong Delta is carpeted with rice paddies, floating markets, crisscrossing rivers and canals. Ben Tre, known for growing coconut, attracts visitors to its fresh-aired environment of large green coconut and fruit gardens. Join us and experience the slow pace of delta life, meet very friendly locals, feel the generous hospitality and kiss away the stresses of modern life.
 
Set off for the Mekong Delta by road. We will reach Ben Tre after two hours for an interesting day with many outdoor activities for parents and kids: Take a rowboat through winding water-coconut canals, ride a bike along lush rural roads, sip tea with honey, meet local families and see how local traditional methods utilize every bit of the coconut, and enjoy lunch served with Mekong specialties that you may taste for the very first time:  elephant ear fried fish and shrimp coconut rice root salad to name a few.  Relax, enjoy the tour and leave with memorable experiences. Return to your hotel in Ho Chi Minh City.

OPTIONAL DINING IN THE DARK
This evening, embark on a sensory journey into a different world and savor a fusion dinner in complete darkness. This multi-sensory dining experience stimulates your senses and opens your mind. With the guidance of visually impaired staff, you will find out a new way of sensing the environment around you. 
The pitch-black experience may at first be disconcerting, but later enables you to dine by using other senses of taste, touch, smell, and sound to identify flavors. Return to your hotel after dinner.

Day 4 Ho Chi Minh City- Hoi An Street foodie experience

After breakfast, we will go to the airport for a short flight to Da Nang City. Met by our guide, and take a 40-minute drive to the quaint town of Hoi An.
The Walking tour starts from your hotel to explore Hoi An’s charming Ancient Town. Visit its fascinating architecture, old Japanese covered bridge, Chinese assembly hall and local market, where you will meet and chat with vendors about their food. Continues accessing backstreets, discovering out-of-the-way producers and street vendors making and selling a wide variety of exotic foods and tasty local special dishes. We will try the famous baguette – Banh Mi Phuong.
 
Anthony Bourdain described Banh Mi Phuong ‘with the lot’ as a "symphony in a sandwich". A perfect arrangement of crisp bread filled with homemade pork liver pâté mixed with fat and ground pork, thinly sliced roast pork loin, pork meatloaf, sprout-sized coriander, a healthy dose of mint, Vietnamese coriander, thinly sliced green onions, lettuce, tomato, cucumber, julienned pickled carrots, and the sauces, which remain closely guarded secrets. Taste it and find out the reason it has become so widely known over the last few years.

Day 5 Hoi An – The Art of Central Vietnam Cuisine

The food of Vietnam has been shaped through a long association with Chinese rule, French colonization, Southeast Asian intrusions and the fierce individuality of Vietnam. It has an exquisite balance of flavors, with heat, sweet, sour, and our famous fish-sauce mixed together in a range of flavors and tastes, while maintaining balance between fresh herbs & meats and a selective use of spices. Vietnamese dishes deliver a roundly satisfying mouth-feel. Join today's cooking class for an in-depth journey into Vietnamese dishes and a hands-on cooking experience as well.
 
Today, you will have an unusual hands-on cooking experience combined with a boat ride on the Thu Bon River and floating down the river into the water coconut forest. Be Vietnamese for half a day by going to the market, wandering through the fresh food section, purchasing the meal’s ingredients, tasting some samples of street foods and tropical fruits, and preparing four iconic dishes of Central Vietnam at your very own cooking station. Meal is served with all the dishes prepared during the class. Share great fun moments together.

OPTIONAL PA LAO SHOW IN THE EVENING
Created by artists from A.O, the Palao Show will tell you untold Cham stories expressed in vigorous body movements, soaring with positive emotions against profound pain and grief.  A groundbreaking mix of Cham ethnic instruments, electro, powerful vocals, and daily utensils reinvented as instruments. Join the show and mingle in a very interesting but creative exercise.
 
The Palao Show is a soulful dance that carries the Cham spirit and culture which prevailed over Central and Southern Vietnam for over a thousand years, rendered in contemporary stage language. Palao is a mesmerizing whirl of dance and music – ancient and modern intertwined – where untold stories explore myriad emotions, from triumph and unbridled joy to deep despair and grief. Various-sized terracotta pots and signature white costumes make a bold statement of Cham culture. Enjoy the show and appreciate the beauty of Cham ethnicity whose heritage shapes a large part of the foundation of Vietnamese culture.

Day 6 Hoi An – Hue – Home hosted Meal

After breakfast, you will leave Hoi An for Hue Imperial City, a three-hour drive over the spectacular Hai Van Pass.
 
Our first visit in Hue is to the King Minh Mang Tomb which is located on the left bank of the Huong River, which represents the perfect harmony between nature and architecture. King Minh Mang (1821–1840) boasted to have had 64 princesses and 78 princes due to his secret wines.
 
In the late afternoon, you will be brought to a local home where three generations live in a typical traditional garden house. Meet and walk with the host to a nearby vibrant market to purchase ingredients for lunch. At your host’s house, discuss and learn about local culture and traditions. Then, take a short walk to visit the family’s ancestral temple to grasp the customs associated with ancestral worship before coming back to see the cooking demonstration of traditional dishes and participate in setting the home meal. Enjoy a Vietnamese family meal with your hosts. Say goodbye, and return to your hotel.

Day 7 Hue – Culinary Experience with a Gastronomy Artisan

Spend this morning with a celebrated gastronomy artisan to gain genuine understanding into Hue food that is highly regarded as Vietnam’s prized possession in the culinary world. This artisan is famous not only in Vietnam but also in the UK, France, Belgium, and the rest of Europe as a result of her contribution in introducing Vietnamese cuisine to international friends. Being the head of the professional cooking department in several national universities, author of several cooking books, cuisine presenter for Vietnam and London television and receiving the most coveted prize of “Most Talented Vietnamese Woman”, she is more than happy to share with you her knowledge of culinary treasures 
 
Follow her steps to visit a local market and experience the tantalizing sights, sounds, and flavors of local daily life. You will be informed on how to select the freshest produce and ingredients, essential for Hue royal dishes that are complex and intricate. Sample one or more delicious snacks available on almost every corner as you stroll around all areas of the market. Continue on your culinary journey by visiting the local food stalls which each specialize in a different popular dish such as com hen (mussel rice), banh beo, banh nam banh loc (varieties of soft rice cakes)…It’s time to feel the warmth and hospitality of your gastronomy artisan at her private house where you will sit down together to sample some royal dishes intricately designed and decorated. Open your heart to her as she tells you about her life as a teacher, a writer, a cook and a wife.
 
In the afternoon, you will visit the Imperial Citadel in the center of the Complex of Hue Monuments inscribed by UNESCO as a World Heritage Site. Enter through the towering main gate to observe the magnificent architecture and gardens while your guide explains the events and the intrigue surrounding the former royal court.  
 
Later on, take a leisure boat trip on the Perfume River that flows through the city of Hue. Disembark and see the Thien Mu pagoda, one of the oldest ancient architectural structures for religious worship in Hue, and one of Vietnam’s most recognizable icons.

Day 8 Hue – Hanoi: The art of Vegetarian Cuisine

After breakfast, take a one-hour flight to Hanoi, the capital city of Vietnam. Upon arrival, you will be greeted and transferred to the city center.
Enjoy lunch at our selected Vegetarian restaurant that is meant to bring comfort, good luck and blessings for all diners. The restaurant owner is a Buddhist who wishes to share the art of vegetarian cuisine with all diners every day through traditional vegetarian trays, or delicate vegetarian dishes of different regions of the country.
You will surely love the ambience of the restaurant for its cozy, elegant and rustic decor under the light of Buddhism culture.
Let’s sit down and enjoy fresh and delicious vegetarian dishes that energize your body and soul.
 
Later, continue discovering the city of Hanoi in which the history and culture of Vietnam are clearly on display.
Visit the Temple of Literature, the first university of Vietnam, which constitutes a rare example of well-preserved traditional Vietnamese architecture.
Next, you will experience local life along the train tracks, which may look peculiar and curious to foreigners, but this is just life here. Every day, the old-fashioned trains go through what otherwise functions as a narrow alley in this residential area, a normal routine for people who live here. Take a short rest at a local coffee shop, where you will enjoy a cup of Vietnamese coffee while watching the train go through (the guide will let you know the best times to visit based on the train schedule). This allows you to feel a contrast between the old and modern vibes of this city.

OPTIONAL Hanoi After Dark by Vantage Vespa
Hanoi after dark is completely different from what you see in the daytime. The city now becomes shimmering, colorful and humming with night activities. The adventurous excursion is combined with riding a vintage Vespa through some landmarks of the city and tasting the local cuisine.
 
A night of fun and wonderment starts at a rooftop bar, with views of St Joseph’s Cathedral and the Old Quarter from above. Follow your drive through the bustling streets, narrow alleys, beautiful tree-lined avenues, all with a rich hidden history and tradition. Stop to enjoy some of the local specialties. Go deep into the nightlife while being driven to local bars and lounges where the young generation and even older people come to unwind and flaunt their unique styles.

Day 9 Hanoi – Cooking class - Street food highlights and secret of Phở

Today, you will participate in an amazing hands-on cooking demonstration combining a fun cyclo ride in the Old Quarter to Dong Xuan Market, one of the biggest wholesale markets in Hanoi. Do as locals do: wander through the fresh food market, purchase the meal’s ingredients, taste samples of street foods and tropical fruits, and prepare a proper Vietnamese meal as well as putting the finishing touches on your dishes. Lunch is served with all the dishes prepared during the class. Share great fun moments together.
 
In the afternoon, you will visit the Tran Quoc Pagoda, Hanoi’s oldest pagoda on the bank of West Lake.  Next, we walk to Truc Bach Lake to visit the monument of John McCain, a famous American politician and naval officer.
 
Continue your visit on foot to a busy street where you will learn more about how Hanoians cook and eat Phở. Since you may already have tried a big bowl (or several bowls) of traditional Phở noodle soup, you are now in the capital of Phở, and we would like to introduce you to different amazing types of this specialty. The fascinating stories of Phở will be shared by our local guide during your tour tonight. First, you will be served different types of Phở, and other delicious dishes that not known by many foreigners. Then, you will get acquainted with a new way to enjoy this traditional Vietnamese food, the Phở Cocktail. The story of how the “Phở” Cocktail came to be will be told, and you will learn how it is loved and served at some select bars & lounges in the old town of Hanoi as a signature drink. Enjoy music & Phở Cocktail in a glass at the bar where the special drink was created. Many signature cocktails are heavily influenced by Vietnamese culture and cuisine.

Day 10 Hanoi- HaLong Bay- Overnight on Luxury Cruise

Today we travel through the rich farmlands of the Red River Delta and the landscape of rice fields, water buffaloes and Vietnamese villages to HaLong Bay, a UNESCO World Heritage Site of outstanding natural beauty.
Upon arrival, you’ll be greeted with a welcome drink on board prior to your check-in. Lunch with fresh seafood will be served while the junk is cruising through many stone islets, floating villages and small beaches. Visit a floating fishing village, talk and meet with local villagers prior to your swimming or free time on your own on the sundeck. Dinner served on board. Overnight stay on board.

Day 12 HaLong Bay– Hanoi

In the early morning, take part in Tai Chi practice on the sundeck, then have breakfast while enjoying the cruise around HaLong Bay, as the junk passes by many islets named by their shapes. Stop for a while to explore one of the most beautiful of the bay. The junk then continues towards the wharf. Ready to disembark around early noon and go back to Hanoi.
